Festive Finger Food: Ways to Transform Christmas Remains into New Year’s Eve Appetizers

You could also have a ball with Spanish croquettes. Prepare the white sauce a few days ahead, then use remaining pork, poultry, or foraged fungi for the filling. Blitz old bread into breadcrumbs to cover them, then cook until crisp. Sausage roll fillings are another perfect use for those breadcrumbs, or use them as a coating for chicken pieces. Veg, meanwhile, can be dressed up and fit for a party with a big batch of fried potato cake. Combine all your remaining vegetables with herbs, then season and add a binding agent. Stamp out portions to about the size of blinis, then store in the freezer. Refresh in a preheated oven for a short time and finish with your choice of topping—perhaps sliced beef and sharp horseradish. A good tip, though: save a stash for a late breakfast the next day.
